“Blended with 45% Pinot Meunier, 35% Pinot Noir, and 20% Chardonnay, this Caillez Lemaire Reflets Extra Brut uses 70% grapes from the exceptional 2018 vintage and 25% from 2017. The primary fermentation takes place in stainless steel without malolactic conversion, followed by 60 months of aging on lees and a 5 grams per liter dosage during disgorgement. The result is a pretty rose gold color in the glass, with a light white raspberry aroma accompanied by tree fruit, clotted cream, and subtle brioche notes. On the palate, enjoy a refreshing acidity and flavors of apple tart, cream, plum, and a touch of clay minerality.”
