“Grapes are hand-harvested and sorted prior to pressing into cool temperature-controlled vats for slow fermentation which lasts up to 3 months.  Pale yellow color with aromatics of exotic fruit, peach and citrus.  Loads of minerals and citrus backed by bright acidity make this persistent, tense wine perfect for most anything, but especially fish and goat cheese.”
